A Rogan Josh is an Indian aromatic lamb curry that is traditionally cooked with spices in a creamy tomato base.

The lamb tenderly falls apart when eating, and every mouthful is wonderfully pleasing and full of flavour that is hard to beat.

If you're feeling hungry, fret not this popular lamb curry recipe is "really easy to make at home", Food Director of BBC Good Food, Sara Buenfeld promised.

"This lamb curry's a popular restaurant classic that's really easy to make at home," noted Sara. "It's a rich, crowd-pleasing lamb dish that the whole family will enjoy."

Taking 35 minutes to prepare, and just over an hour for the flavours to infuse into the curry, here's how you can make lamb Rogan Josh curry.

Lamb Rogan Josh recipe


Two onions, quartered

Four tbsp sunflower oil

Four garlic cloves, finely crushed

thumb-size piece of fresh root ginger, peeled and very finely grated

Two tbsp of Madras curry paste

Two tsp paprika

One cinnamon stick

Six green cardamom, bashed to break the shells

Four cloves

Two bay leaves

One tbsp tomato purée

1kg lean leg of lamb, cut into generous cubes

150ml Greek yoghurt

Chopped coriander, to garnish


Put the onions in a food processor and whizz until finely chopped. Heat the oil in a large heavy-based pan, then fry the onion with the lid on, stirring infrequently, until it is golden and soft.

Add the garlic and ginger, then fry for five minutes more. Tip the curry paste, all the spices and the bay leaves into the pan, with the tomato purée.

Stir well over the heat for about 30 seconds, then add the meat and 300ml of water. Stir to mix, turn down the heat, then add the yoghurt.

Cover the pan, then gently simmer for 40 to 60 minutes until the meat is tender and the sauce is thick. Serve scattered with coriander, with plain basmati rice.

To ensure the rice is light and fluffy, Nagi from RecipeTinEats advised: "Use a rice to water ratio of one cup [250g] of rice to 1.5 [300g] cups of water."

Nagi's way to make fluffy rice

  1. Place water and rice in saucepan
  2. Bring to simmer on medium-high without the lid
  3. When entire surface is bubbly and foamy, place lid on, turn down to medium-low and cook for 12 minutes
  4. Remove from stove and rest 10 minutes
  5. Fluff; then serve!

Additional side dishes to complement the lamb curry are roti - an Indian flatbread - and raita, which is a cool mixture of yoghurt, mint and cucumber.

If you would like to indulge in a glass of red while eating lamb Rogan Josh, The Wine Society has some key suggestions.

The Wine Society recommended pairing lamb Rogan Josh, which should be "more aromatic than hot and spicy", with "succulent reds".

Examples include reds such as Zinfandel, full and rich Spanish reds or ripe Shiraz; major supermarkets will have an array of red wines to choose from.
